Ingredients:

For the donuts:
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup buttermilk
  • 1/4 cups unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
For the vanilla filling:
  • 1 cup whole milk
  • 1/2 cup cream
  • 4 large egg yolks
  • 1/ 4 cups Granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
For the caramel icing:
  • 4 granulated sugar (for basting)

Directions:

Preheat oven to 350°F (175°C). Coat a donut pan with nonstick cooking spray.

Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl.

In a separate bowl, mix together the butter, melted butter, eggs, and vanilla extract.

Pour the wet ingredients into the dry ingredients and mix until well combined. Be careful not to overmix.

Tear off the corners and pack the dough into a piping bag or ziplock bag. Pour batter into prepared donut pans, filling each cavity about 2/3 full.

Bake in the preheated oven for 10 to 12 minutes or until donuts spring back when lightly touched.

While the donuts are baking, prepare the cream filling. Add milk and cream to a saucepan and heat over medium heat until steaming but not boiling.

In a separate bowl, mix together the egg yolks, sugar, and cornstarch until a smooth, light mixture forms.

Gradually pour the warm milk mixture into the egg yolk mixture, stirring constantly to soften the eggs.

Return the mixture to the pot and cook over medium heat, stirring constantly, until thickened.

Remove from heat and stir in vanilla extract. Place the vanilla pudding in a bowl and cover with plastic wrap. Press directly onto the surface of the vanilla pudding to avoid forming a skin. Chill in the refrigerator.

Once the donuts are cooked and cooled, fill each donut with the cooled custard filling using a piping bag fitted with an elongated nozzle.
Sprinkle granulated sugar evenly over the filled donut.

Using a burner, carefully caramelize the sugar in each donut until golden and crisp.

Serve these delicious crème brûlée donuts right away and enjoy the wonderful combination of textures and flavors.
