Ingredients:

For the Crust:
1 1/2 cups graham cracker crumbs
1/4 cup sugar
6 tablespoons unsalted butter, melted

For the Filling:

2 cups fresh peaches, peeled and diced (
1 cup Greek yogurt, plain or vanilla
1/2 cup heavy cream
1/2 cup sugar
1 teaspoon vanilla extract
2 tablespoons all-purpose flour

For the Topping:

1/2 cup cream
2 tablespoons powdered sugar
1/2 teaspoon vanilla extract
Sliced ​​peaches and mint leaves for garnish (Optional)

Directions:

Preheat the oven to 350°F (175°C). Line a 20cm square baking dish with baking paper, leaving an overhang on the sides for easy removal.

Prepare the dough: Combine the graham cracker crumbs, sugar and melted butter in a bowl. Mix until well combined. Press the mixture firmly into the base of the prepared baking dish. Bake for 10 minutes, remove from the oven and let cool slightly.

Prepare the filling. In a mixing bowl, combine the diced peaches, Greek yogurt, cream, sugar, vanilla extract, and flour. Stir until sugar dissolves and mixture is smooth.

Assemble the bar. Pour the filling over the cooled base, distributing it evenly.

Bake: Return the baking dish to the oven and bake for 25 to 30 minutes, or until the filling is set and lightly browned around the edges.

Refrigerate: Allow bars to cool to room temperature, then refrigerate until firm, at least 4 hours or overnight.

Prepare topping: Before serving, add powdered sugar and vanilla extract to the cream and mix until stiff peaks form. Spread or pipe whipped cream over the chilled bars.

To serve: Garnish with sliced ​​peaches and mint leaves, if desired. Use the parchment paper overhang to lift the bars out of the pan and cut into squares.
