Ingredients:

2 tablespoons olive oil
1 pound Italian sausage, casing removed
1 onion, diced
3 cloves garlic, minced
4 cups chicken broth
1 jar (15 oz) Alfredo sauce
9 lasagna noodles, broken into pieces
1/2 cup heavy cream
1 cup mozzarella cheese, shredded
1/2 cup Parmesan cheese, grated
Salt and pepper to taste
Fresh parsley, chopped for garnish

Directions:

In a large pot, heat olive oil over medium heat. Add sausage and cook until browned, breaking it apart as it cooks.
Add onions and garlic, sautéing until onions are translucent.
Pour in chicken broth and bring to a boil. Add broken lasagna noodles and simmer until noodles are tender, about 10 minutes.
Stir in Alfredo sauce and heavy cream, cooking until heated through.
Add mozzarella and Parmesan cheeses, stirring until cheeses are melted and soup is creamy.
Season with salt and pepper to taste. Serve hot, garnished with chopped parsley.
