Meatball Boats
Preparation:
Heat oven to 375°F (190°F).
Combine ground beef, bread crumbs, Parmesan, milk, egg, minced garlic, oregano, basil, salt, and pepper in a large bowl. Mix well.
Form small meatballs from the mixture, approximately 1 inch (2.5 cm) in diameter.
Place meatballs on a baking sheet and bake for 20 minutes or until cooked through.
While the meatballs are toasting, prepare the hoagie buns by cutting a V shape into the top of each bun.
Scoop out the bread to create a hollow “boat” in each bread.
In a small bowl, mix the melted butter and garlic powder. Brush the inside of each hoagie roll with the garlic butter.
Once the meatballs are cooked, place 3 to 4 meatballs in each “boat” on the hoagie roll.
Top the meatballs with marinara sauce and grated mozzarella cheese.
Place the filled hoagie rolls on a baking sheet and bake for an additional 10 minutes or until the cheese is melted and bubbly.
Garnish with freshly chopped parsley before serving.
