Ingredients:

For the Cake:
  • 1 and 3/4 cups all-purpose flour
    1 and 1/2 cups granulated sugar
    3/4 cup unsweetened cocoa powder
    1 and 1/2 teaspoons baking powder
    1 and 1/2 teaspoons baking soda
    1 teaspoon salt
    2 large eggs
    1 cup whole milk
    1/2 cup vegetable oil
    2 teaspoons vanilla extract
    1 cup boiling water
For the Filling:

1 cup heavy cream
1/4 cup powdered sugar
1 teaspoon vanilla extract
For the Ganache:
1 cup heavy cream
8 ounces semisweet chocolate, chopped

For Decoration:

Chocolate shavings

Instructions:

Prepare the Cake:

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round baking pans.
In a large bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
Add the eggs, milk, oil, and vanilla extract. Beat on medium speed for 2 minutes.
Stir in the boiling water (the batter will be thin). Pour the batter into the prepared pans.
Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
Cool the cakes in the pans for 10 minutes, then remove them from the pans and transfer to wire racks to cool completely.

Make the Filling:

In a large bowl, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
Spread the whipped cream filling on top of one of the cake layers. Place the second layer on top.

Make the Ganache:

Place the chopped chocolate in a medium bowl.
In a small saucepan, heat the heavy cream until it just begins to simmer. Pour the hot cream over the chocolate and let it sit for 5 minutes, then stir until smooth and glossy.
Allow the ganache to cool slightly until it thickens but is still pourable.

Assemble the Cake:

Pour the ganache over the top of the cake, letting it drip down the sides.
Use a spatula to spread the ganache evenly over the top and sides of the cake.
Decorate with chocolate shavings.

Serve:
