Grilled Ribeye Steaks with Herb Butter
Ingredients
For the steaks:
- 4 rib eye steaks (approximately 1 inch thick)
- Salt
- Black pepper
- Olive oil
For the herb butter:
- 1/2 cup unsalted butter, softened
- 2 cloves garlic, minced
- 1 tablespoon fresh parsley, minced
- 1 tablespoon fresh thyme, minced
- 1 teaspoon lemon zest
- Salt and black pepper to taste

Prepare the herb butter:
- 1/2 cup unsalted butter, softened
- 2 cloves garlic, minced
- 1 tablespoon fresh parsley, minced

2. Prepare the herb butter:
In a small bowl, combine the softened butter, minced garlic, parsley, thyme, lemon zest, salt, and black pepper. Mix well until all ingredients are evenly distributed.
– Place the butter mixture on a sheet of plastic wrap and roll it into a log. Twist the ends to seal tightly.
– Refrigerate the herb butter strands for at least 30 minutes to set.
2. Prepare the steaks.
– Remove the steaks from the refrigerator and allow them to cool to room temperature for about 30 minutes before frying.
– Preheat the grill over high heat.
– Brush both sides of the steaks with olive oil and season generously with salt and black pepper.
3. Grill the steaks.
– Place the steaks on the preheated grill and cook for approximately 4 to 5 minutes per side for medium rare or until desired doneness.
– Use a meat thermometer to check the internal temperature (130°F for medium rare, 140°F for medium, 160°F for well done).
4. Finish with the herb butter.
– Once the steaks are done, remove them from the grill and let them rest for 5 minutes.
– Slice the herb butter roll and place a slice on top of each steak while it rests. The butter will melt and create a flavorful sauce.
