Greek Chicken Gyros
Ingredients:
For the Chicken Marinade:
1 pound boneless, skinless chicken thighs
2 tablespoons olive oil
Juice of 1 lemon
3 cloves garlic, minced
2 teaspoons dried oregano
Salt and pepper to taste
For the Tzatziki Sauce:
1 cup Greek yogurt
1 cucumber, grated and drained
2 cloves garlic, minced
1 tablespoon lemon juice
1 tablespoon fresh dill, minced
Salt and pepper to taste
To serve:
4 pita bread
1 tomato, sliced
1 red onion, thinly sliced

Greek Chicken Gyros
Preparation:
Marinate the Chicken:
Mix olive oil, lemon juice, minced garlic, dried oregano, salt and pepper in a bowl. Add chicken thighs to coat well with the marinade. Cover and refrigerate for at least 1 hour, preferably overnight.
Prepare the Tzatziki Sauce:
In a separate bowl, mix Greek yogurt, grated and drained cucumber, minced garlic, lemon juice, minced dill, salt and pepper. Cover and refrigerate to allow flavors to blend.
Cook the Chicken:
Heat a grill or frying pan over medium-high heat. Remove the chicken from the marinade and fry for about 6 to 7 minutes per side, or until cooked through and slightly browned. Remove from heat and let rest for a few minutes before thinly slicing.
Assemble the Gyros:
Heat pita breads on a grill or in a dry frying pan. Place a cooked chicken slice on each pita bread, followed by a tomato slice, red onion, and a handful of lettuce.
Spread each gyro generously with tzatziki sauce.
Servings:
Fold or roll the pita and place over the filling. Serve immediately warm.
