Ingredients:

For the cookie dough:
  • 2 cups all-purpose flour
    1/2 teaspoon baking soda
    1/2 teaspoon salt
    3/4 cup unsalted butter, melted
    1 cup brown sugar
    1/2 cup granulated sugar
    1 tablespoon vanilla extract
    1 egg
    1 egg yolk
    2 cups chocolate chips
For the cheesecake filling:
  • 225g soft cream cheese
    1/4 cup granulated sugar
    1 teaspoon vanilla extract

Directions:

1. Preheat oven.
Preheat oven to 165°C (325°F) and line a baking sheet with parchment paper.
2. Prepare the cookie dough:
In a medium bowl, combine the flour, baking soda, and salt.
In another large bowl, beat the melted butter, brown sugar, and granulated sugar until smooth. Add vanilla extract, eggs, and egg yolks and beat until well combined.
Gradually add dry ingredients and beat until chocolate chips are added.
3. Prepare cheesecake filling:
In a small bowl, beat softened cream cheese, granulated sugar, and vanilla extract until smooth and creamy.
4. Assemble the Cookies:
Form the cookie dough into tablespoon-sized balls and cut a hole in the center of each ball.
Pour a dollop of the cheesecake mixture into each hole and cover with more cookie dough to seal the cheesecake inside.
5. Bake:
Place the filled cookie balls on the prepared baking sheet and bake for 15-18 minutes or until lightly golden brown around the edges.
Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely. Preparation and Cooking Time:
