Ingredients

  • 1 lb lump crab meat (fresh or pasteurized, picked over for shells)
  • 1/2 cup crushed saltine crackers (about 12-14 crackers)
  • 1 large egg
  • 1/4 cup mayonnaise
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 1 tsp Old Bay seasoning (or more, to taste)
  • 1 tbsp fresh lemon juice
  • 2 tbsp fresh parsley, finely chopped
  • Salt and pepper, to taste
  • 2 tbsp unsalted butter (for frying)
