- 3 lbs russet or Yukon Gold potatoes, peeled and thinly sliced (about 1/8 inch thick)
- 3 tbsp unsalted butter
- 3 tbsp all-purpose flour
- 2 cups whole milk
- 1 cup heavy cream
- 2 garlic cloves, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp nutmeg (optional, for depth)
- 2 cups shredded sharp cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1 tbsp chopped fresh parsley (optional, for garnish)

Instructions
1. Prepare the Potatoes
- Preheat your oven to 375°F (190°C).
- Grease a 9×13-inch baking dish with butter or non-stick spray.
2. Make the Sauce
- In a medium saucepan, melt butter over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds.
- Whisk in the flour and cook for 1-2 minutes to form a roux.
- Gradually add milk and cream, whisking constantly to avoid lumps.
- Stir in salt, pepper, and nutmeg (if using). Simmer for 2-3 minutes until slightly thickened.
- Remove from heat and stir in 1 1/2 cups of cheddar cheese until melted.
3. Layer the Potatoes
- Spread a third of the potato slices evenly in the prepared baking dish.
- Pour a third of the cheese sauce over the potatoes. Repeat this layering process two more times, ending with cheese sauce on top.
4. Bake
- Cover the dish with foil and bake for 40 minutes.
- Remove the foil, sprinkle Parmesan and the remaining cheddar cheese on top, and bake for an additional 20-25 minutes, or until the potatoes are tender and the top is golden and bubbly.
5. Garnish and Serve
- Let the scalloped potatoes rest for 10 minutes before serving. Garnish with fresh parsley if desired.
