Ingredients

  • 3 lbs russet or Yukon Gold potatoes, peeled and thinly sliced (about 1/8 inch thick)
  • 3 tbsp unsalted butter
  • 3 tbsp all-purpose flour
  • 2 cups whole milk
  • 1 cup heavy cream
  • 2 garlic cloves, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp nutmeg (optional, for depth)
  • 2 cups shredded sharp cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tbsp chopped fresh parsley (optional, for garnish)

Instructions

1. Prepare the Potatoes

  1. Preheat your oven to 375°F (190°C).
  2. Grease a 9×13-inch baking dish with butter or non-stick spray.

2. Make the Sauce

  1. In a medium saucepan, melt butter over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds.
  2. Whisk in the flour and cook for 1-2 minutes to form a roux.
  3. Gradually add milk and cream, whisking constantly to avoid lumps.
  4. Stir in salt, pepper, and nutmeg (if using). Simmer for 2-3 minutes until slightly thickened.
  5. Remove from heat and stir in 1 1/2 cups of cheddar cheese until melted.

3. Layer the Potatoes

  1. Spread a third of the potato slices evenly in the prepared baking dish.
  2. Pour a third of the cheese sauce over the potatoes. Repeat this layering process two more times, ending with cheese sauce on top.

4. Bake

  1. Cover the dish with foil and bake for 40 minutes.
  2. Remove the foil, sprinkle Parmesan and the remaining cheddar cheese on top, and bake for an additional 20-25 minutes, or until the potatoes are tender and the top is golden and bubbly.

5. Garnish and Serve

  • Let the scalloped potatoes rest for 10 minutes before serving. Garnish with fresh parsley if desired.
