Introduction

This Mediterranean Lentil Salad is a vibrant, healthy dish packed with wholesome ingredients. Tender lentils are combined with fresh vegetables, tangy feta cheese, and a zesty lemon dressing, making it a perfect light meal or side dish. Ingredients

For the Salad:

  • 1 cup dry green or brown lentils (or 2½ cups cooked lentils)
  • 1 cucumber, diced
  • 1 pint cherry tomatoes, halved
  • 1 red bell pepper, diced
  • 1 small red onion, finely chopped
  • ½ cup Kalamata olives, pitted and sliced
  • 1 cup crumbled feta cheese
  • ¼ cup fresh parsley, chopped
  • ¼ cup fresh mint, chopped (optional)

For the Lemon Dressing:

  • ¼ cup olive oil
  • 3 tbsp lemon juice (freshly squeezed)
  • 1 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1 clove garlic, minced
  • ½ tsp dried oregano
  • Salt and pepper to taste
