Cowboy Meatloaf and Potato Casserole
Ingredients:
1 pound ground beef
1 onion, chopped
2 garlic cloves, chopped
1 cup breadcrumbs
1/4 cup ketchup
2 tablespoons Worcestershire sauce
1 teaspoon dried thyme
Salt and pepper to taste
4 potatoes (large); 1 cup grated cheddar cheese, peeled and thinly sliced
chopped fresh parsley for garnish (optional)
Cowboy Meatloaf and Potato Casserole
Directions:
Preheat and prepare: Preheat oven to 375°F (190°C) Set and grease a 9 x 13-inch baking dish.
Mix the meatloaf: In a large bowl, combine ground beef, onion, garlic, breadcrumbs, ketchup, Worcestershire sauce, thyme, salt, and pepper. Mix until everything is well mixed.
Shape and serve: Pour the mixture into a baking dish and form a loaf in the center. Place the potato slices around the bread, overlapping them slightly. Also season with salt and pepper.
Cover and Bake: Cover with foil and bake for 45 minutes. Next, let’s reveal.
Add Cheese: Sprinkle cheddar cheese over meatloaf and potatoes. Bake, uncovered, for an additional 15 minutes or until the cheese is bubbly and the meatloaf is cooked through.
