Strawberry Roll Cake
Ingredients:
For the sponge cake:
- 4 large eggs, room temperature
- 3/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup plain flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
For the strawberry cream filling:
1 cup fresh strawberries, peeled and chopped
1/4 cup granulated sugar
1 cup chilled cream
For garnish:
Fresh strawberries, sliced

Methods:
- Step 1: Open the oven Preheat to 350°F (175°C). Line a 25 x 38 cm jelly roll tin with baking paper, leaving overhang on the sides.
Step 2: In a large mixing bowl, beat the eggs and granulated sugar with an electric mixer until light and thick. Add vanilla extract and stir.
Step 3: In a separate bowl, mix together the flour, baking powder, and salt. Gradually fold the dry ingredients into the egg mixture until just combined.
Step 4: Pour the batter into the prepared jelly roll pan and spread it evenly with a spatula. Tap the pan on the counter to remove any air bubbles.
Step 5: Bake in the preheated oven for 10-12 minutes or until the cake is golden brown and springs back when lightly touched.
Step 6: While the cake is baking, prepare the strawberry cream filling. In a blender or food processor, puree the chopped strawberries with the granulated sugar until smooth. In a separate mixing bowl, beat the cold cream until stiff peaks form. Gently fold the strawberry puree into the whipped cream until everything is well combined.
Step 7: Once the cake is baked, remove it from the oven and let it cool in the mold for 5 minutes. Carefully lift the cake from the pan using the overhang of the baking paper and place it on a clean kitchen towel dusted with powdered sugar.
Step 8: While the cake is still warm, carefully roll it up in a kitchen towel, starting at the short end. Roll it up completely and let it cool.
Step 9: Roll out the cooled cake and spread the strawberry cream filling evenly over the surface, leaving a small border around the edges.
Step 10: Carefully unroll the cake, using a kitchen towel to lift and guide the cake. Wrap the roll in plastic wrap and refrigerate for at least 2 hours or until set.
Step 11: Decorate the strawberry roll cake with sliced fresh strawberries before serving. Slice and enjoy this delicious dessert.
