Classic Steak and Eggs
Preparation:
1. Season the steak liberally with salt and pepper.
2. Heat a frying pan over medium heat and add 1 tablespoon of olive oil. Once the steak is hot, add it to the skillet and sear over medium heat for about 4-5 minutes on each side or until desired doneness. Remove from the pot and let rest.
3. In the same pot, reduce heat to medium. Add the butter, garlic and thyme and stir-fry until the butter is melted and fragrant.
4. Crack the eggs into the skillet, being careful not to break the yolks. Season with salt and pepper. Cook until the whites are set but the yolks are still runny, about 2 to 3 minutes.
5. Place the eggs on top of the steaks, spoon the garlic-thyme butter and serve.
