Lemon Tiramisu

Ingredients:

For the lemon syrup:

1/2 cup freshly squeezed lemon juice
1/2 cup granulated sugar
Lemon zest

For the lemon curd:

3 large eggs
3/4 cup granulated sugar
1/2 cup freshly squeezed lemon juice
zest of 2 lemons
6 tablespoons unsalted butter, cubed

For the mascarpone filling:

1 cup cream
1 cup mascarpone cheese
1/2 cup powdered sugar
zest of 1 lemon

For assembly:

1 package Ladyfingers (Savoiardi cookies)
Lemon zest for garnish
Powdered sugar for sprinkling

Instructions:

To make lemon syrup, combine lemon juice, granulated sugar, and lemon zest in a small saucepan. Add and mix. Cook over medium heat, stirring occasionally, until sugar dissolves. Remove from the stove and let cool.
For the lemon curd, whisk together the eggs, granulated sugar, lemon juice, and lemon zest in a heatproof bowl. Place the bowl over a pot of boiling water (double boiler) and cook, stirring constantly, until the mixture is thick enough to coat the back of a spoon, about 10 to 15 minutes.
Remove the lemon curd from the heat, add the cubed butter and stir until melted and smooth. Transfer the lemon curd to a bowl, cover with plastic wrap (touch directly to the surface to avoid forming a skin) and refrigerate until cool and solid (approximately 1
). In a mixing bowl, whip the whipped cream until stiff peaks form. .
In a separate bowl, mix the mascarpone, powdered sugar, and lemon zest until smooth and creamy. Gently add the whipped cream until well combined.
To make lemon tiramisu, dip ladyfingers in lemon syrup, let them soak for a few seconds, then place in a single layer in the bottom of a serving bowl or individual serving glasses.
Spread a layer of mascarpone filling over the soaked ladyfingers, followed by a layer of chilled lemon curd.
Repeat layers of soaked ladyfingers, mascarpone filling, and lemon curd until all ingredients are used, then top with a layer of mascarpone filling.
Cover the lemon tiramisu with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld before stirring and preparing the dessert.
Garnish the lemon tiramisu with lemon zest and a little powdered sugar before serving.
