Chocolate Roll

Ingredients:

For the chocolate sponge cake:
  • 4 large eggs, set aside
    3/4 cup granulated sugar
    1 teaspoon vanilla extract
    1/4 cup unsweetened cocoa powder
    1/4 cup all-purpose flour
    1/4 teaspoon salt
For the chocolate cream filling:

1 cup heavy cream
8 ounces finely chopped semisweet chocolate
2 tablespoons unsalted butter
1 teaspoon vanilla extract

For garnish:

Powdered sugar

Directions:

Heat Preheat oven to 350°F (175°C). Grease and line a 25 x 38 cm jelly roll tin with baking paper. Leave an overhang on the sides to facilitate removal.

In a large mixing bowl, mix together the egg yolks and granulated sugar until a thick, pale yellow mixture forms. Add vanilla extract and stir.

In a separate bowl, combine cocoa powder, flour, and salt.

Gradually add the dry ingredients to the egg yolk mixture and stir until well combined.

In a separate bowl, whisk the egg whites until stiff peaks form.

Gently fold the beaten egg whites into the chocolate mixture until no streaks remain.

Spread the batter evenly into the prepared jelly roll pan.

Bake in the preheated oven for 12 to 15 minutes, or until the cake is set and springs back when lightly touched.

While the cake is baking, prepare the chocolate cream filling. Heat the cream in a saucepan until it begins to boil.

Remove the pot from the heat and add the chopped chocolate and butter. Let stand for 1 minute, then stir until smooth and creamy. Add vanilla extract and stir.

As soon as the cake is finished baking, remove it onto a clean kitchen towel dusted with powdered sugar.

Carefully remove the baking paper from the cake.

Starting at the short end, gently roll the cake and towel together into a tight spiral. Cool completely on a wire rack.

Once the cake has cooled, carefully roll it out and spread the chocolate cream filling evenly over the surface.

Carefully unroll the cake and place it on a platter, this time without the towel, seam side down.

As a final touch, dust the top of the chocolate roll with powdered sugar.

Slice this delicious chocolate roll and serve as a delicious dessert for any occasion.
