Parisian Charm Pistachio Crepes
Ingredients
Ingredients for the crepes:
1 cup all-purpose flour
1 1/2 cups whole milk
2 large eggs
2 tablespoons melted butter
1 tablespoon sugar
Pinch of salt
Cooking butter
Ingredients for the pistachio cream:
1 cup peeled pistacia (finely ground)
1/2 cup granulated sugar
1/2 cup cream
1/4 cup mascarpone cheese
1 drop almond extract (optional)
Parisian Charm Pistachio Crepes
Directions:
Make crepe batter make.
In a blender, combine flour, milk, eggs, melted butter, sugar, and salt. Mix until the mixture is smooth. Let the dough rest for at least 30 minutes.
Prepare crepes.
Heat a non-stick frying pan over medium heat and brush with a little butter.
Pour a small amount of batter into the center of the pan and swirl to distribute it evenly.
Cook for about 1 minute or until the edges begin to peel easily, then flip and cook the other side for an additional 30 seconds.
Remove the crepe and repeat with the remaining batter.
Prepare the pistachio cream:
Mix the ground pistachios with the sugar, cream, mascarpone and almond extract and stir until creamy.
Assemble the crepes:
Spread each crepe half generously with the pistachio cream.
Fold the crepe over the cream, then fold it into a triangle or roll it up.
Repeat with all crepes.
