Ingredients:

1 English cucumber
8 ounces cream cheese, softened
2 tablespoons fresh lemon juice
2 tablespoons finely chopped fresh herbs (such as dill, chives, or parsley)
Salt and pepper (to taste)
lemon juice Peel (as needed) for garnish
Additional fresh herbs for garnish

Instructions:

Step 1: Wash cucumbers thoroughly and pat dry with paper towels. Cut cucumbers into thin slices, about 1/4 inch thick. Arrange the cucumber slices on a platter or tray.

Step 2: In a small mixing bowl, combine softened cream cheese, fresh lemon juice, and chopped herbs. Season with salt and pepper.

Step 3: Blend the cream cheese mixture until smooth and well combined.

Step 4: Using a small spoon or a piping bag fitted with a star tip, place a small amount of the herbal cream cheese mixture on top of each cucumber slice.

Step 5: Garnish each cucumber with a pinch of lemon zest and additional fresh herbs if desired.

Step 6: Serve immediately or cover and refrigerate until ready to serve.

Note:

You can adjust the herbs in the cream cheese mixture to your preference. Basil, mint, or tarragon would also work well in this recipe.
For a more tangy flavor, add 1 teaspoon lemon zest to the cream cheese mixture in addition to the lemon juice.
These cucumber sashimi are perfect for preparing for parties and gatherings. Prepare a mixture of cucumber slices and herbed cream cheese and mix together just before serving.
