Baked salmon in foil whit asparagus
Ingredients
- 4 salmon fillets
- 1 bunch of asparagus, trimmed
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon lemon zest
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Lemon slices for garnish
- Fresh dill or parsley for garnish
Baked Salmon in Foil with Asparagus
Directions
- Preheat your oven to 375°F (190°C).
- Lay out four large pieces of aluminum foil, each about 12 inches (30 cm) in length. Place a salmon fillet in the center of each piece of foil.
- In a small bowl, whisk together the minced garlic, olive oil, lemon juice, lemon zest, dried oregano, salt, and pepper.
- Drizzle the garlic and lemon mixture over each salmon fillet.
- Arrange asparagus spears around each salmon fillet.
- Fold the sides of the foil over the salmon and asparagus, creating a packet. Make sure to seal the edges tightly to trap in the steam.
- Place the foil packets on a baking sheet and bake in the preheated oven for about 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Carefully open the foil packets (watch out for steam), garnish with lemon slices and fresh dill or parsley, and serve hot.
