Instructions

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Cream the Butter and Sugar:
    • In a large mixing bowl, cream the softened butter and sugar until light and fluffy. Add the egg and vanilla extract, mixing until well combined.
  3. Add the Bananas:
    • Mix in the mashed bananas until the mixture is smooth.
  4. Combine Dry Ingredients:
    • In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon (if using).
  5. Combine Wet and Dry Ingredients:
    • Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix.
    • Fold in chocolate chips or chopped walnuts if desired.
  6. Scoop and Bake:
    • Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
    • Bake for 10-12 minutes, or until the edges are lightly golden. The cookies should still be soft in the center.
  7. Cool and Enjoy:
    • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

  • Storage: Store these cookies in an airtight container at room temperature for up to 3 days, or freeze for longer storage.
