Banana Pudding Cheesecake
Ingredients:
– 2 cups crushed vanilla wafers
– 1/2 cup unsalted butter, melted
– 3 ripe bananas, sliced
– 3 packages softened cream cheese (8 oz each)
– 1 cup granulated sugar
– 3 large eggs
– 2 teaspoons vanilla extract
– 1 cup heavy cream
– 1/2 teaspoon ground cinnamon
– 1/4 cup banana liqueur (optional)
– 1/2 cup sour cream
Banana Pudding Cheesecake
Preparation:
1 . Preheat the oven. 350°F (175°C).
2. In a bowl, mix crushed vanilla wafers and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form a crust.
3. Place bananas, cream cheese, sugar, eggs, vanilla extract, cream, cinnamon, and banana liqueur in a blender. Mix until a smooth mixture forms.
4. Pour the filling into the bottom of the springform pan.
5. Bake for 50 minutes or until the dough is firm and jiggles slightly in the center.
6. Let cool for 1 hour, then place in the refrigerator for at least 4 hours.
7. Top with sour cream before serving.
