Beef and Cheese Empanadas
Instructions
Step 1: Prepare the Dough (if making from scratch)
- In a bowl, combine flour and salt. Add cubed butter and mix until the mixture resembles coarse crumbs.
- Gradually add ice water until the dough comes together. Knead lightly, form a ball, wrap in plastic, and refrigerate for at least 30 minutes.
Step 2: Prepare the Filling
- In a skillet over medium heat, cook the ground beef until browned. Drain excess fat if necessary.
- Add the chopped onion and garlic, and cook until the onion is soft and translucent.
- Stir in cumin, smoked paprika, tomato sauce (if using), salt, and pepper. Cook for an additional 2-3 minutes. Remove from heat and let the filling cool slightly.
- Once cool, mix in the shredded cheese.
Step 3: Assemble the Empanadas
- Preheat your oven to 375°F (190°C).
- Roll out the dough to about 1/8-inch thickness on a floured surface. Use a round cutter or a bowl to cut circles (about 4-5 inches in diameter).
- Place a spoonful of the beef and cheese filling onto one side of each circle.
- Fold the dough over to form a half-moon shape. Press the edges with a fork to seal. Brush the tops with the beaten egg for a golden finish.
Step 4: Bake
- Place the empanadas on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes or until golden brown.
Step 5: Serve
- Garnish with chopped parsley or cilantro, if desired, and serve warm. Enjoy with salsa, sour cream, or your favorite dipping sauce!
