Cheesy Ground Beef and Rice Casserole
Instructions:
- Cook the Ground Beef:
- In a large skillet, heat the olive oil over medium heat. Add the ground beef, breaking it up as it cooks.
- Once the beef is browned and cooked through, drain any excess fat. Add the diced onion and minced garlic to the skillet, and cook for 2-3 minutes until softened and fragrant.
- Prepare the Casserole Mixture:
- Stir in the dried oregano, basil, salt, and pepper.
- Add the uncooked rice, diced tomatoes, tomato sauce, and beef broth. Mix everything together until well combined.
- Bring the mixture to a simmer, then cover and reduce the heat. Let it cook for 15-20 minutes, or until the rice is tender and has absorbed most of the liquid. Stir occasionally to prevent the rice from sticking.
- Assemble the Casserole:
- Preheat your oven to 350°F (175°C).
- Once the rice is cooked, transfer the mixture into a greased 9×13-inch baking dish.
- Sprinkle the shredded cheddar cheese evenly over the top of the casserole.
- Bake:
- Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
- Serve:
- Let the casserole sit for a few minutes before serving. Garnish with freshly chopped parsley or green onions for extra color and flavor.
Tips:
- You can add other vegetables like bell peppers or corn to the casserole for added flavor and nutrition.
- For a spicier version, add a pinch of red pepper flakes or a diced jalapeño pepper with the onions and garlic.
- Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven or microwave.
Enjoy this cheesy, satisfying ground beef and rice casserole! It’s the perfect one-dish meal for busy weeknights.
