Beef Barley Soup
Ingredients:
500g ground beef
2 cups elbow macaroni
1 tablespoon olive oil
1 onion, minced
2 garlic cloves, minced
1 cup grated cheddar cheese
1 cup beef broth or stock
1/2 cup cream
1 4 tablespoons tomato paste
1 teaspoon paprika
Salt and pepper to taste
Chopped fresh parsley (for garnish)
Beef Barley Soup
Preparation:
Heat the olive oil in a large saucepan over medium heat. Add chopped onion and minced garlic and fry until transparent.
Increase the heat to medium and add the minced meat. Cook until browned, breaking up the meat.
Add tomato paste, paprika, salt and pepper and mix. Cook for another 2 minutes.
Add the beef broth, bring to a boil, and add the elbow macaroni. Cover and simmer until macaroni is tender, about 10 minutes.
Once the macaroni is cooked, add the cream and grated cheddar cheese and stir until well combined and creamy.
Garnish with chopped fresh parsley before serving.
