Beef Enchilada Casserole

Ingredients:

– 1 pound ground beef
– 1 onion, chopped
– 2 garlic cloves, chopped
– 1 can (15 oz) black beans, drained and rinsed
– 1 can (10 oz) enchilada sauce )
– 1 cup frozen or canned corn kernels
– 1 teaspoon cumin
– 1 teaspoon chili powder
– 12 corn tortillas
– 2 cups shredded cheddar cheese
– salt and pepper (to taste)
– chopped for garnish Fresh Cilantro

Instructions:

1. Preheat oven to 375°F (190°C).
2. In a large skillet, saute the ground beef, onion, and garlic over medium heat until the beef is browned. We will shed excess fat.
3. Add black beans, corn, cumin, chili powder, salt, and pepper and stir. Cook for 5 minutes until well mixed.
4. In a greased baking dish, layer four tortillas, half of the beef mixture and one third of the cheese. Repeat layers and top with remaining tortillas and cheese.
5. Pour the enchilada sauce evenly over the top layer.
6. Bake in the preheated oven for 20-25 minutes until the cheese is bubbly and golden brown.
7. Garnish with fresh coriander before serving.
