Beef Stuffed Baked Potato

Ingredients:

  • 4 baking potatoes (large)
  • 1 pound ground beef
  • 2 carrots (chopped)
  • 1 onion (chopped)
  • 2 cloves garlic (chopped)
  • 2 cups beef broth
  • Salt and pepper (to taste)
  • Olive oil
  • 1/4 cup sour cream (chopped chives optional)
Macaroni and Cheese:
  • 2 cups macaroni noodles
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 2 cups grated cheddar cheese
  • Salt and pepper to taste
  • 1/ 2 teaspoons paprika
Cabbage and sausage:
  • 1 cabbage, chopped
  • 1 pound smoked sausage, sliced ​​
  • 1 onion, sliced ​​
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

Instructions:

Preheat oven to 400° Heat to F (200 °C).
Wash and dry the potatoes and prick them several times with a fork. Place the potatoes in the oven for 1 hour or until tender.
Season the beef with salt and pepper. Heat some olive oil in a large pot over medium heat. Add the beef and cook until browned on all sides.
Add the chopped onion and garlic to the pan and fry until soft.
Pour the beef broth and add the carrots. Bring to a simmer, cover, and simmer until beef is tender and easy to cut, about 2 to 3 hours.
Once the beef is cooked, shred it with two forks and mix it with the carrots and cooking liquid.
Make a slit in the top of the baked potato and fluff the inside with a fork.
Stuff potatoes with shredded beef and carrots. Top with sour cream or chives if you like.

Macaroni and Cheese:

Cook macaroni according to package directions until al dente. Drain and set aside.
Melt the butter in the same saucepan over medium heat. Add flour, stir and cook for 1 minute.
Gradually add the milk, stirring constantly until the mixture thickens.
Remove from heat, add grated cheese and stir until melted and smooth.
Add the cooked macaroni to the cheese sauce and season with salt, pepper, and paprika.
Serve warm.

Cabbage and Sausage:

Heat the olive oil in a large skillet over medium heat. Add the sausage and onion and cook until the onion is translucent and the sausage is brown.
Add the shredded cabbage, season with salt and pepper, and cook, stirring occasionally, until the cabbage is soft and slightly caramelized.
