Beef with Roasted Vegetables
Ingredients:
1 kg of beef (any part)
– 400 grams of onion
– 100-120 grams of butter
– 50 ml of water
– 3 cloves of garlic
– 1 1/2 to 2 teaspoons of salt
– Black pepper
– 1 teaspoon apple cider vinegar
– 2 to 3 eggplants
– 1 to 2 zucchini
– Salt
– Oil for frying
– 1 onion
– 1 to 2 green peppers
– 2 tomatoes
– Kumeli Suneri (spice) 1 teaspoon Mixture)
– Black pepper
– 1-2 cloves of garlic
– Fresh dill, parsley, coriander (optional)
Beef with Roasted Vegetables
Instructions:
1. Melt the butter in a saucepan over medium heat, add the onion and let it become translucent. Stir-fry until cooked.
2. Add beef, water, garlic, salt, black pepper, and apple cider vinegar.
3. Cover and simmer until beef is tender and melts in your mouth, 60 to 90 minutes.
4. Thinly slice the eggplant and zucchini, sprinkle with salt and let rest for about 15 minutes. Pat dry.
5. Fry the eggplant and zucchini until golden brown.
6. In a separate frying pan, fry the onions, peppers, and tomatoes until soft.
7. Add Kumeri Sunehri, black pepper and garlic and stir fry lightly.
8. Mix roasted vegetables and fresh herbs.
9. Serve tender beef with spicy vegetable mix.
