Ingredients:

For the pastry cup:
  • 500g pastry
  • Water
  • Sugar
For the berry filling:
  • 250g berries (fresh or frozen)
  • 2 tablespoons sugar
  • 1 teaspoon cornstarch  Juice
  • 1 / Lemon 2 Pieces
For the topping:
  • Whipped cream 350g
  • Greek yogurt 250g
  • Powdered sugar 3 tablespoons

Instructions:

For the puff pastry cups:
  • Preheat the oven to 200°C ( 392°F).
  • Roll out the puff pastry and cut into 12 equal pieces.
  • Place each piece in the muffin tin and gently press into the cups.
  • Brush the pastry case with water and sprinkle with sugar.
  • Bake in the preheated oven for 15-20 minutes or until golden brown and fluffy.
  • Once baked, remove from the oven and let cool in the muffin tin.
For the berry filling:
  • Combine berries, sugar, cornstarch, and lemon juice in a saucepan.
  • Cook over medium heat, stirring occasionally, until the berries release their juices and the mixture thickens.
  • Remove from heat and let cool slightly.
For the topping:
  • Place the cream in a mixing bowl and whisk until stiff peaks form.
  • In a separate bowl, mix together the Greek yogurt and powdered sugar until smooth.
  • Gently fold the whipped cream into the yogurt mixture until everything is well combined.
Assemble:
  • Once the pastry cases have cooled, spoon the berry filling into each case.
  • Top with a generous amount of whipped cream and yogurt mixture.
  • Serve immediately and enjoy delicious berry puff pastry cups and whipped cream.
