Berry Puff Pastry Cups with Whipped Cream
Ingredients:
For the pastry cup:
- 500g pastry
- Water
- Sugar
For the berry filling:
- 250g berries (fresh or frozen)
- 2 tablespoons sugar
- 1 teaspoon cornstarch Juice
- 1 / Lemon 2 Pieces
For the topping:
- Whipped cream 350g
- Greek yogurt 250g
- Powdered sugar 3 tablespoons
Berry Puff Pastry Cups with Whipped Cream
Instructions:
For the puff pastry cups:
- Preheat the oven to 200°C ( 392°F).
- Roll out the puff pastry and cut into 12 equal pieces.
- Place each piece in the muffin tin and gently press into the cups.
- Brush the pastry case with water and sprinkle with sugar.
- Bake in the preheated oven for 15-20 minutes or until golden brown and fluffy.
- Once baked, remove from the oven and let cool in the muffin tin.
For the berry filling:
- Combine berries, sugar, cornstarch, and lemon juice in a saucepan.
- Cook over medium heat, stirring occasionally, until the berries release their juices and the mixture thickens.
- Remove from heat and let cool slightly.
For the topping:
- Place the cream in a mixing bowl and whisk until stiff peaks form.
- In a separate bowl, mix together the Greek yogurt and powdered sugar until smooth.
- Gently fold the whipped cream into the yogurt mixture until everything is well combined.
Assemble:
- Once the pastry cases have cooled, spoon the berry filling into each case.
- Top with a generous amount of whipped cream and yogurt mixture.
- Serve immediately and enjoy delicious berry puff pastry cups and whipped cream.
