Best Scalloped Potatoes
Ingredients
4 cups thinly sliced potatoes
3 tablespoons butter
3 tablespoons flour
1 1/2 cups milk
1 teaspoon salt
Pinch of cayenne pepper
1 cup grated sharp cheddar cheese.
Sprinkle 1/2 cup grated cheese on top

Preparation
Melt the butter in a small saucepan and stir in the flour. Please take a break.
Add all the cold milk and mix with a whisk.
Season with salt and cayenne pepper. Simmer the sauce over low heat until smooth and boiling, stirring occasionally with a whisk.
Reduce heat, add cheese and stir.
Place half of the potato slices in a lightly oiled 1 liter baking dish.
Pour half of the cheese sauce over the potatoes.
Repeat process with second layer of potatoes and cheese sauce.
Sprinkle remaining cheese on top. Sprinkle paprika on top for color.
Bake uncovered at 180 °C for about 1 hour.
