Blackberry Cheesecake
Ingredients:
For the blackberry crust:
1 1/2 cups blackberry flavored cookies, crumbled
1/4 cup unsalted butter, melted
For the cream cheese layer:
2 cups softened cream cheese
1 /2 cup granulated sugar
1 teaspoon vanilla extract
1/2 cup cream
For the blackberry mousse layer:
1 cup fresh blackberries
1/2 cup granulated sugar
1 1/2 cup chilled cream
3 in. 2 tablespoons melted gelatin warm water
For garnish:
Whole fresh blackberries
Whipped cream
Mint leaves
Blackberry Cheesecake
Prepare:
Prepare blackberry peels:
Add crushed blackberry cookies and melted butter. Mix until well combined.
Press the mixture into the bottom of the springform pan and refrigerate for at least 30 minutes.
Prepare the cream cheese layer:
Stir cream cheese, sugar, and vanilla extract in a bowl until smooth.
In a separate bowl, whip the cream until stiff and carefully fold into the cream cheese mixture.
Pour this over the cooled blackberry crust and smooth the top with a spatula.
Refrigerate for at least 1 hour to firm up.
Prepare the blackberry mousse layer.
Puree fresh blackberries with sugar until smooth. Strain to remove seeds if necessary.
Mix the chilled cream until stiff.
Carefully heat the melted gelatin if it is not already liquid and mix it into the blackberry puree.
Gently fold blackberry mixture into whipped cream until no streaks remain.
Pour the blackberry mousse over the cream cheese layer and refrigerate for several hours or overnight.
Garnish:
Just before serving, add a refreshing touch to the cheesecake by garnishing the cheesecake with whole fresh blackberries, a drizzle of whipped cream and some mint leaves.
