Slow-Braised Beef Roast with Cranberry Balsamic Glaze
Instructions
-
Prepare the Beef Roast:
- Preheat your oven to 300°F (150°C).
- Pat the beef roast dry with paper towels and season generously with salt and black pepper on all sides.
-
Sear the Beef:
- In a large, oven-safe pot or Dutch oven, heat the olive oil over medium-high heat.
- Sear the beef roast on all sides until browned, about 4-5 minutes per side. Remove the beef from the pot and set it aside.
-
Sauté the Aromatics:
- In the same pot, add the diced onion and cook for 3-4 minutes until softened.
- Add the minced garlic and cook for an additional minute until fragrant.
-
Add the Braising Liquid:
- Pour in the beef broth and add the fresh or frozen cranberries.
- Return the beef roast to the pot, and add the rosemary and thyme sprigs. Cover the pot with a lid.
-
Braise the Beef:
- Transfer the pot to the preheated oven and braise for 3-4 hours, or until the beef is tender and easily pulls apart with a fork.
-
Prepare the Cranberry Balsamic Glaze:
- While the beef is braising, make the glaze. In a small saucepan, combine the cranberry sauce, balsamic vinegar, and brown sugar.
- Bring to a simmer over medium heat, stirring until the sugar dissolves. Let it cook for 5-7 minutes until thickened. Season with salt and black pepper to taste, then set aside.
-
Glaze the Beef:
- When the beef roast is done braising, remove it from the pot and place it on a serving platter.
- Drizzle the cranberry balsamic glaze over the top of the beef, or serve it on the side for dipping.
-
Serve:
- Slice or shred the beef and serve with your favorite sides, such as mashed potatoes, roasted vegetables, or a fresh green salad.
This Slow-Braised Beef Roast with Cranberry Balsamic Glaze is rich, tender, and full of complex flavors that are perfect for a special occasion or holiday meal. Enjoy!
