Breakfast Cupcakes
Ingredients:
12 slices of bread (ears removed)
12 eggs
1/2 cup milk
1 cup grated cheese (cheddar or your choice)
1/2 cup cooked and crumbled bacon or sausage
Salt Season with pepper
Add as needed- In: chopped vegetables (bell peppers, onions, tomatoes), herbs (chives, parsley)
Breakfast Cupcakes
Preparation:
Preheat oven to 350°F (175°C). Lightly grease a 12-cup muffin tin.
Flatten each slice of bread with a rolling pin and carefully press into muffin cups to form a dough.
Whisk eggs and milk in a bowl. Season with salt and pepper. Add cheese, cooked bacon or sausage, and any other desired ingredients and mix.
Pour about 3/4 of the egg mixture into each muffin tin lined with bread.
Bake in the preheated oven for 20-25 minutes or until the eggs are set and golden brown.
Let cool for a few minutes before removing from the muffin tin. Serve hot.
