Cheesy Garlic Butter Mushroom Stuffed Chicken
Instructions
1. Prepare the Filling
- Heat 2 tbsp butter in a skillet over medium heat.
- Add chopped mushrooms, garlic, thyme, salt, and pepper. Sauté for 4-5 minutes until the mushrooms are soft and fragrant. Set aside to cool slightly.
2. Prepare the Chicken
- Preheat your oven to 375°F (190°C).
- Cut a pocket into the thickest part of each chicken breast without cutting through. Season the outside with salt and pepper.
- Mix the sautéed mushrooms with mozzarella and Parmesan cheese. Stuff each chicken breast with the mixture and secure with toothpicks or kitchen twine.
3. Sear the Chicken
- Heat olive oil in an oven-safe skillet over medium-high heat.
- Sear the stuffed chicken breasts for 2-3 minutes per side, until golden brown. Remove from skillet and set aside.
4. Make the Garlic Butter Sauce
- In the same skillet, melt 2 tbsp butter. Add minced garlic and cook for 30 seconds.
- Stir in chicken broth and lemon juice, scraping up any browned bits from the bottom of the skillet.
5. Bake the Chicken
- Return the chicken breasts to the skillet, spooning some of the sauce over the top.
- Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken is fully cooked (internal temperature reaches 165°F/74°C).
6. Garnish and Serve
- Spoon more sauce over the chicken and garnish with chopped parsley. Serve with roasted vegetables, mashed potatoes, or a fresh salad.
