Instructions

1. Prepare the Filling

  1. Heat 2 tbsp butter in a skillet over medium heat.
  2. Add chopped mushrooms, garlic, thyme, salt, and pepper. Sauté for 4-5 minutes until the mushrooms are soft and fragrant. Set aside to cool slightly.

2. Prepare the Chicken

  1. Preheat your oven to 375°F (190°C).
  2. Cut a pocket into the thickest part of each chicken breast without cutting through. Season the outside with salt and pepper.
  3. Mix the sautéed mushrooms with mozzarella and Parmesan cheese. Stuff each chicken breast with the mixture and secure with toothpicks or kitchen twine.

3. Sear the Chicken

  1. Heat olive oil in an oven-safe skillet over medium-high heat.
  2. Sear the stuffed chicken breasts for 2-3 minutes per side, until golden brown. Remove from skillet and set aside.

4. Make the Garlic Butter Sauce

  1. In the same skillet, melt 2 tbsp butter. Add minced garlic and cook for 30 seconds.
  2. Stir in chicken broth and lemon juice, scraping up any browned bits from the bottom of the skillet.

5. Bake the Chicken

  1. Return the chicken breasts to the skillet, spooning some of the sauce over the top.
  2. Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken is fully cooked (internal temperature reaches 165°F/74°C).

6. Garnish and Serve

  • Spoon more sauce over the chicken and garnish with chopped parsley. Serve with roasted vegetables, mashed potatoes, or a fresh salad.
