Cajun Seafood Gumbo

Ingredients:

  • 1 cup flour
  • 1 cup oil
  • 1 teaspoon gumbo fillets
  • Cajun spice
  • Onion powder
  • 1 small bell pepper, chopped 2 tablespoons minced garlic
  • 2 to 3 liters water or seafood stock
  • 1 1/2 shrimp
  • lbs. 1 pint of fresh oysters
  • 2 pounds of crab (optional)
  • Season with salt and pepper

Preparation:

Make the roux: Heat equal parts oil and flour (1 cup each) in a heavy saucepan over medium heat. heat. Stir constantly until the roux turns a deep chocolate color, about 25 to 40 minutes. Be patient and careful to avoid burns.

Once the roux has reached your desired color, add the chopped onion, pepper, celery, and a pinch of salt and pepper. Cook for another 3-5 minutes.

Add 2 to 3 quarts of water or seafood broth to the pot along with Cajun seasoning, garlic powder, onion powder, bay leaves, gumbo fillets, and liquid crab meat. Cover and simmer on medium heat for 20 minutes.

Add the crab to the pot, cover and simmer for a further 30 minutes.

Finally, add the oysters and shrimp to the pot, cover and simmer for a further 10 minutes, or until the shrimp are pink and opaque.

Serve Cajun Seafood Gumbo hot with your favorite side dish, such as rice or crusty bread.

Note:

Adjust Cajun seasoning, salt, and pepper to taste.
Feel free to add additional seafood or ingredients like crawfish, sausage, or okra for even more flavor and texture.
