Cajun Shrimp Loaded Baked Potato

Ingredients:

– 4 large russet potatoes, scrubbed and fork-pierced
– 1 pound (450 g) shrimp, peeled and deveined
– 2 tablespoons Cajun seasoning
– Grind 1 cup grated cheddar cheese
– 4 tablespoons butter
– 1 / 2 cups sour cream
– 1/4 cup chopped green onions
– Salt and pepper to taste
– Olive oil

Directions:

1. Preheat oven to 400°F. Preheat to (200°C). Place the potatoes on a baking sheet and bake for about 1 hour or until tender.
2. While the potatoes are baking, season the shrimp with Cajun seasoning. Heat a frying pan over medium heat, add a little olive oil, and sear the shrimp until pink and opaque, about 2 to 3 minutes on each side.
3. Once the potatoes are boiled, make a slit in the center of the potatoes and fluff them with a fork. Add butter to each potato and season with salt and pepper.
4. Top each potato with cooked shrimp, lots of cheddar cheese, sour cream, and green onions.
5. Return the potatoes to the oven and bake for an additional 5 minutes or until the cheese is melted and bubbly.
