Cheese tortellini with rich provolone sauce
Ingredients:
– Cheese tortellini 1 pound
– 1 tablespoon olive oil
– Thinly sliced steak (ribeye, sirloin, etc.) 1 pound
– Salt and pepper to taste
– 1 onion, thinly sliced
– 1 bell pepper, sliced
– 8 oz mushrooms, sliced
– 2 garlic cloves, minced
– 1 cup beef broth
– 1 cup cream
– grated provolone 1 cup cheese
– grated Parmesan 1/4 cup
– 2 tablespoons chopped fresh parsley
Cheese tortellini with rich provolone sauce
Prepare:
1. Cook cheese tortellini according to package instructions. Drain and set aside.
2. Heat the olive oil in a large skillet over medium heat. Season the thinly sliced steak with salt and pepper and add to the skillet. Grill for 2-3 minutes on each side until golden brown and desired tenderness. Remove steak from pan and set aside.
3. In the same pot, add the sliced onions, peppers, and mushrooms. Cook for 5 to 6 minutes or until vegetables are tender and lightly browned.
4. Add the minced garlic to the pot and cook for another minute or until

5. Pour the beef broth into the pot, scraping up any brown bits from the bottom of the pot. Bring to a boil and simmer for 2-3 minutes.
6. Mix the cream, shredded provolone cheese, and grated Parmesan until the cheese is melted and the sauce is smooth and creamy.
7. Flip the pan-fried steak and cheese tortellini. Stir and heat.
8. Garnish with chopped fresh parsley before serving.
