Cheesy Spinach Stuffed Shells

 

Ingredients:

  •  1 box jumbo pasta
     1 tablespoon olive oil
     2 cups ricotta cheese
     2 cups grated mozzarella cheese (divided)
     1/2 cup grated Parmesan cheese
    1 egg, lightly beaten
     1 teaspoon garlic powder
     1 teaspoon dried basil
     1 teaspoon dried oregano
     1/4 teaspoon salt
     1/4 teaspoon black pepper
     10 ounces frozen spinach, thawed and drained
     3 cups marinara sauce

Preparation:

1. Preheat oven to 375°F (190°C).

Cook jumbo pasta al dente according to package directions. Drain and set aside. 3. In a large bowl, combine the ricotta, 1 cup shredded mozzarella, grated Parmesan, eggs, garlic powder, dried basil, dried oregano, salt, and black pepper. Mix well.

Mix in the thawed, drained spinach until evenly distributed. 5. Spread 1 cup of marinara sauce in the bottom of a 9 x 13 inch baking dish.

Spoon the cheese and spinach mixture over the cooked pasta and place in the baking dish.

Pour the remaining marinara sauce over the stuffed shells and sprinkle the remaining cup shredded mozzarella cheese on top.

Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
9.
Remove the foil and bake for an additional 10 minutes or until the cheese is melted and bubbly. 10. Allow the dish to cool for a few minutes before serving.
