Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  2. Cook the Chicken:
    • Season the chicken pieces with salt and pepper.
    • In a large skillet, heat the olive oil over medium-high heat. Add the chicken and cook for 5-7 minutes, or until browned and mostly cooked through. Transfer the chicken to a plate and set aside.
  3. Sauté the Mushrooms and Spinach:
    • In the same skillet, add the butter. Once melted, add the sliced mushrooms and cook until golden brown, about 5 minutes.
    • Add the minced garlic and cook for another 1 minute, until fragrant.
    • Add the spinach and cook until wilted, about 2-3 minutes.
  4. Prepare the Cream Sauce:
    • Lower the heat and pour in the heavy cream. Stir in the Parmesan cheese and Italian seasoning. Let it simmer for 3-4 minutes until the sauce thickens slightly.
  5. Assemble the Casserole:
    • Place the chicken pieces in a baking dish, then pour the mushroom, spinach, and cream mixture over the chicken.
    • Sprinkle the shredded mozzarella cheese over the top, if using.
  6. Bake:
    • Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly (if using) and the chicken is fully cooked.
  7. Serve:
    • Garnish with fresh parsley if desired, and serve hot.
