Chipotle Beef & Pasta Skillet
Ingredients:
1 pound ground beef
1/2 yellow onion, chopped
5 garlic cloves, chopped
1 tablespoon tomato paste
1 heaped tablespoon all-purpose flour
1/2 tablespoon each garlic powder and onion powder
~ 4 cups homemade chicken soup
8 ounces tomato sauce
Freshness herbs (oregano, thyme, basil), chopped
3 chipotle peppers in adobo sauce with a spoonful of sauce
1/2 pound pasta
1/4 cup cream
Sharp A handful of cheddar grated cheese
2 Kraft singles (optional)
A handful of spinach
Salt and pepper to taste
Chipotle Beef & Pasta Skillet
Directions:
Brown the beef: In a large skillet, fry the ground beef until brown. Add onions and cook until soft.
Flavor base: Add garlic and tomato paste and cook until fragrant. Add the flour and stir to evaporate the raw flavor, then add the garlic powder, onion powder, and black pepper.
Deglaze: Pour in the chicken broth and deglaze the pan, scraping up any browned bits. Add fresh herbs, chipotle pepper and adobo sauce, and tomato sauce. Bring to a boil.
Pasta time: Add pasta to pot, just covering with liquid. Add liquid as needed. Cook until pasta is al dente.
Creamy Finish: Remove the pot from the heat. Add grated cheese, kraft cheese, and cream and stir until a smooth mixture forms. Stir in the spinach and season with salt and pepper.
