Chocolate Chip Maraschino Cherry Shortbread Bars
Instructions
- Preheat the oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving some overhang on the sides for easy removal.
- Cream the butter and sugar: In a large bowl, beat the softened butter and powdered sugar until light and fluffy (about 2 minutes). Mix in the vanilla extract.
- Add the dry ingredients: Gradually add the flour and salt, mixing until just combined. The dough will be thick and crumbly.
- Fold in the chocolate chips and cherries: Gently fold in the chocolate chips and chopped maraschino cherries. Make sure the cherries are well-dried before adding them to prevent excess moisture in the dough.
- Press into the pan: Press the dough evenly into the prepared baking pan. It may help to use a piece of parchment paper to press down evenly.
- Bake for 20-25 minutes, or until the edges are lightly golden and the center is set.
- Cool and slice: Allow the bars to cool completely in the pan before lifting them out using the parchment paper overhang. Slice into bars or squares.
- Optional drizzle: For an extra touch, drizzle melted chocolate over the bars once cooled.
