Ingredients

cake:

6 eggs, separated
Sugar 165 g
All-purpose flour 130 g
Cocoa powder 40 g

Cream filling:

Mascarpone cheese 300 g
Powdered sugar 100 g
Whipped cream 150 ml (33-36 t)
35 0 g sour cream

Chocolate ganache:

30g dark chocolate
30ml cream (33-36t)

Preparation:

Chocolate sponge cake:

Preheat the oven to 180°C (350°F). Grease and line a baking pan (40 x 29 cm).
Place the egg whites in a bowl and whisk until fluffy. Gradually add 165g of sugar and beat until soft peaks form.
Add the egg yolk and mix until smooth. Sift
all-purpose flour and cocoa powder. Gently fold into egg mixture until well combined.
Pour the batter onto the prepared baking sheet and spread it out evenly.
Bake for 15 minutes or until a toothpick inserted in the center comes out clean.
Once the cake has cooled completely, trim the edges and cut into quarters. Crush the remaining ingredients into pieces.

Cream Filling:

In a mixing bowl, mix the mascarpone cheese and powdered sugar until smooth and creamy.
In a separate bowl, whisk the whipped cream until it thickens.
Gradually add the whipped cream to the mascarpone mixture until everything is well combined.
Add sour cream and stir until smooth.
Assemble the cake:
Place the chocolate sponge cake layer on a plate. Spread a layer of cream filling evenly over the cake.
Repeat this process with the remaining layers and cream filling, finishing with a layer of cream on top.
Decorate the edges of the cake with cake flour and press lightly to seal.
Chocolate Ganache:
Heat the cream in a saucepan until steaming but not boiling.
Place the dark chocolate in a heatproof bowl. Pour the warmed cream over the chocolate and let stand for 1 minute.
Stir until smooth and glossy.

Finished:

Pour the chocolate ganache over the cake and let it drip down the sides.
Place the cake in the refrigerator for at least 1 hour until the ganache has set.
