Ingredients

For the Lamb Shanks:
  • 4 lamb shanks
  • 3 tbsp olive oil
  • Salt and black pepper, to taste
  • 1 large onion, diced
  • 2 carrots, diced
  • 3 celery stalks, diced
  • 4 garlic cloves, minced
For the Herb Braising Sauce:
  • 2 cups red wine (Merlot or Cabernet Sauvignon works well)
  • 2 cups beef or lamb stock
  • 1 can (14 oz) diced tomatoes
  • 2 tbsp tomato paste
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • 1 tsp smoked paprika
  • Zest of 1 lemon
  • Salt and pepper, to taste
