Classic Egg Salad Pasta Salad
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain, rinse with cold water, and set aside to cool completely.
- Prepare the Dressing: In a large mixing bowl, combine the mayonnaise, Greek yogurt or sour cream, Dijon mustard, yellow mustard (if using), and lemon juice. Mix well until smooth and creamy.
- Add Ingredients: Gently fold in the chopped eggs, celery, red onion, pickle relish (if using), and fresh parsley or dill.
- Combine Pasta and Dressing: Add the cooled pasta to the dressing and egg mixture. Gently stir until the pasta is evenly coated. Season with salt and pepper to taste.
- Chill and Serve: Cover and refrigerate for at least 30 minutes to let the flavors meld together. Before serving, sprinkle a bit of paprika and fresh herbs on top for garnish.
