Classic Vanilla Panna Cotta
Instructions:

Bloom the Gelatin:
- Pour the milk into a small bowl and sprinkle the gelatin over it. Let it sit for 5-10 minutes to bloom. The mixture should thicken slightly.

Prepare the Cream Mixture:
- In a medium saucepan, combine the heavy cream and sugar. Cook over medium heat, stirring occasionally, until the sugar dissolves and the cream is hot but not boiling.

Add Gelatin and Vanilla:
- Once the cream mixture is heated, remove the saucepan from heat. Stir in the bloomed gelatin mixture until completely dissolved.
- Add the vanilla extract or vanilla bean seeds, and stir until well combined.

Pour into Molds:
- Pour the panna cotta mixture into small serving glasses, ramekins, or molds. Let them cool slightly, then refrigerate for at least 4 hours, or until set.

Serve:
- To serve, you can keep the panna cotta in the serving glasses, or carefully unmold by running a knife along the edges and inverting onto a plate.
- Top with fresh berries, a fruit compote, or a drizzle of honey if desired.
