Instructions:

  1. Bloom the Gelatin:
    • Pour the milk into a small bowl and sprinkle the gelatin over it. Let it sit for 5-10 minutes to bloom. The mixture should thicken slightly.
  2. Prepare the Cream Mixture:
    • In a medium saucepan, combine the heavy cream and sugar. Cook over medium heat, stirring occasionally, until the sugar dissolves and the cream is hot but not boiling.
  3. Add Gelatin and Vanilla:
    • Once the cream mixture is heated, remove the saucepan from heat. Stir in the bloomed gelatin mixture until completely dissolved.
    • Add the vanilla extract or vanilla bean seeds, and stir until well combined.
  4. Pour into Molds:
    • Pour the panna cotta mixture into small serving glasses, ramekins, or molds. Let them cool slightly, then refrigerate for at least 4 hours, or until set.
  5. Serve:
    • To serve, you can keep the panna cotta in the serving glasses, or carefully unmold by running a knife along the edges and inverting onto a plate.
    • Top with fresh berries, a fruit compote, or a drizzle of honey if desired.
