Slow Cooker Pork Tenderloin with Creamy Dijon Sauce
Ingredients:
2 pounds pork tenderloin
1 tablespoon olive oil
1 teaspoon garlic powder
Salt and freshly ground black pepper to taste
1 cup chicken broth
3 tablespoons Dijon mustard
1 tablespoon unsalted butter
1/4 cup heavy cream
1 tablespoon all-purpose flour
2 teaspoons fresh thyme leaves
Optional: fresh parsley for garnish
Slow Cooker PorkĀ Creamy Dijon Sauce
Directions:
Season pork tenderloin generously with garlic powder, plenty of salt, and black pepper.
Add the olive oil to a large skillet over medium heat and fry the pork tenderloin on all sides until golden brown, about 2 to 3 minutes on each side.
Place the grilled filet mignon in the slow cooker and add the chicken broth.
Combine Dijon mustard and butter in a bowl and stir until well combined. Pour this mixture over the tenderloin in the slow cooker.
Cover the slow cooker and place on low heat for 3 to 4 hours or until the internal temperature of the pork reaches at least 145 degrees Fahrenheit.
After cooking, remove the fillet and let it rest.
Pour the remaining liquid from the slow cooker into a small saucepan. Mix the cream and flour together and add to the pot. Bring to a boil and allow to thicken for a few minutes. Add fresh thyme leaves and mix.
Cut the rested pork tenderloin into slices, drizzle with creamy Dijon sauce and garnish with fresh parsley if desired. Serve immediately.
