Cranberry Loaf Recipe

Ingredients:

2 cups sugar

3 eggs, room temperature
3/4 cup butter, room temperature
1/2 tsp vanilla extract
1/2 tsp almond extract
2 cups flour
1 tsp baking powder
1/2 tsp salt
1 bag (8 oz) fresh cranberries
Sprinkles
1/4 cup brown sugar
1/4 cup flour
1/3 cup butter

Directions:

Preheat oven to 350 degrees and generously grease 2 loaf pans (you can also make very large 1- or 9-inch cake pans).
Beat the eggs and sugar in a large bowl for 5 minutes or until the mixture has nearly doubled in volume (do not skip this step).
Beat the butter, vanilla and almond extract until smooth.
Carefully beat the flour, baking powder and salt into a smooth mixture, then add the cranberries.
Pour the batter into the prepared pan.
Combine all topping ingredients in a small bowl and mix until sandy. Sprinkle over slices of bread.
Bake 2 loaves for 45-50 minutes or 1 large loaf for 60-70 minutes. Bake until a toothpick inserted comes out clean.
Allow bread to cool before slicing.
