Cream Cheese and Bacon Stuffed Doritos Chicken
Ingredients:
boneless, skinless chicken breasts
1 cup softened cream cheese
1/2 cup crumbled cooked bacon
1 cup shredded mozzarella cheese
2 cups shredded Nacho Cheese Flavored Doritos
1 cup all-purpose flour
2 large eggs, beaten
1 tablespoon milk
Salt and pepper to taste
2 tablespoons olive oil

Preparation:
Prepare the chicken: Preheat oven to 190°C (375°F). Using a sharp knife, cut a pocket into the side of the chicken breast, but do not cut all the way through.
Make the filling: In a medium bowl, combine the softened cream cheese, crumbled bacon, and grated cheese.
Stuff the chicken: Spoon the cream cheese mixture into the chicken breast pockets, filling evenly. Secure edges of chicken breasts with toothpicks, if desired.
Prepare breading station: Place chopped Doritos in a shallow bowl. Place flour in another shallow bowl. In a third shallow bowl, whisk together beaten eggs and milk.
Bread the chicken: Roll stuffed chicken breasts in the flour and shake off excess flour. Dip in egg mixture and roll in crushed Doritos. Press breadcrumbs into chicken to coat well.
Cook the chicken: Heat olive oil in a large ovenproof skillet over medium-high heat. Add breaded chicken breasts and fry for 2 to 3 minutes on each side until golden brown.
Bake the chicken: Place skillet in preheated oven and bake for 20 to 25 minutes or until chicken is cooked through and the inside is hot and bubbly.
To serve: Remove toothpicks and let chicken rest for 5 minutes before serving. Serve hot!
