Berries and Cream Puff Pastry Tarts
Ingredients:
Puff pastry 400 g (14 oz)
Water 10 ml (0.3 oz)
Sugar 30 g (1.1 oz)
Powdered sugar 100 g (3.5 oz)
Whipped cream 600 ml (20 fl oz)
250 g (8.8 oz) Greek Yogurt
400 g (14 oz) Berry
100 g (3.5 oz) Sugar
50 ml (1.7 fl oz) Lemon Juice
15 g (0.5 oz) Starch
20 ml (0.7 fl oz) Water
Puff pastry 300 g
Water 10 ml
Sugar 20 g
Caramel sauce 5 g
Berries and Cream Puff Pastry Tarts
Preparation:
Preheat the oven to 190 °C and line a baking tray with baking paper.
Roll out the puff pastry and cut into desired shapes using a cookie cutter or knife. Place the dough shapes on the prepared baking sheet.
Make simple syrup by combining water and sugar in a small bowl. Brush the dough pan with the simple syrup mixture.
Bake the pastry shapes for 10-12 minutes or until golden brown and puffed. Remove from the oven and let cool completely.
Place the whipped cream in a mixing bowl and beat until stiff peaks form. Add Greek yogurt until well mixed.
In a separate bowl, combine berries, sugar, lemon juice, and starch. Leave for a few minutes to macerate.
To assemble, spread a layer of cream mixture onto each pastry dish. Top with soaked berries.
Drizzle caramel sauce over each cake for added sweetness.
Serve immediately.
