Creamed Mushroom Chicken Breast
Ingredients:
– 4 boneless, skinless chicken breast fillets
– 2 tablespoons olive oil
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 2 cups sliced mushrooms
– 1 onion, chopped )
– 2 cloves of garlic, chopped
– 1 cup cream
– 1/2 cup chicken broth
– 1 teaspoon thyme
– 1 tablespoon chopped parsley for garnish
Creamed Mushroom Chicken Breast
Preparation:
1. Salt the chicken breasts and season with pepper.
2. Heat olive oil in a large skillet over medium heat. Add the chicken breasts and fry until golden brown on both sides, about 5-6 minutes per side. Remove chicken and set aside.
3. Add onions and mushrooms to the same pot. Cook until starting to soften, about 3 to 4 minutes. Add garlic and cook for another minute.
4. Pour in the chicken broth and deglaze the pot, scraping any brown bits from the bottom of the pot.
5. Stir in the cream and thyme and bring to a boil. Lower the heat and return the chicken breasts to the pot. Cover and simmer for about 10 minutes or until chicken is cooked through.
6. Garnish with chopped parsley before serving.
