Creamy Cajun Chicken Pasta
Instructions
- Cook the Pasta:
- Cook pasta according to package directions in salted water until al dente. Drain and set aside.
- Season and Sear the Chicken:
- Season the chicken slices with 1-2 teaspoons of Cajun seasoning, salt, and pepper.
- Heat 1 tbsp of olive oil in a large skillet over medium-high heat. Add the chicken and cook until golden brown on both sides, about 4-5 minutes per side, until cooked through. Remove from skillet and set aside.
- Cook the Vegetables:
- In the same skillet, add another tablespoon of olive oil. Add the bell pepper and onion, sautéing until softened, about 5 minutes. Add the garlic and cook for another minute, until fragrant.
- Make the Creamy Sauce:
- Reduce the heat to medium and pour in the heavy cream and chicken broth, stirring to combine. Sprinkle in the remaining Cajun seasoning and bring the mixture to a simmer.
- Add the Parmesan cheese, stirring until melted and smooth. Adjust seasoning with salt and pepper to taste.
- Combine Everything:
- Return the cooked chicken and pasta to the skillet, tossing to coat everything in the creamy Cajun sauce. Let it simmer for a few more minutes to allow the flavors to meld.
- Garnish and Serve:
- Serve hot, garnished with fresh parsley.
Tips
- Adjust Spice Level: For a spicier dish, add a pinch of cayenne pepper or more Cajun seasoning. For a milder version, reduce the Cajun seasoning and add extra cream.
- Cheese Options: Parmesan works well, but you could try adding some grated mozzarella for extra creaminess.
- Leftovers: Store in the fridge for up to 3 days. Reheat gently on the stove with a splash of cream or broth to maintain the sauce’s texture.
